I work for small to mid-size company less than PCs , Windows 10 Enterprise LTSB appears to be a good fit for us given what many of our machines do run custom apps and talk to custom hardware. Long-term Servicing channel is not intended for deployment on most or all the PCs in an organization; it should be used only for special-purpose devices. As a general guideline, a PC with Microsoft Office installed is a general-purpose device, typically used by an information worker, and therefore it is better suited for the Semi-Annual servicing channel. Just let us use windows the way we actually want to, instead of what the C-level marketing drones want. But it's just a non-sense. This is why you need updates: they bring to your computer "agility". You cannot predict what your users will need in a couple of months. To avoid issues with users that wouls like to have "Candy Crush" or other non-corporate software we simply disabled the Windows Store in our gold image. This is a "quick-win" that does not solve everything but is helpful. A quick example? If your users need a calculator then you will have to install it by yourself in your W10 image. Works fine, no issues, and we currently intend to stick with for next academic year at least.

None of these applications required an entire systems alteration to update themselves. Neither did we just "install and forget" with Windows 7, either. Corporate images are constantly maintained and updated. Windows updates are staged and managed in-house and deployed or withheld depending on their compatibility with other business-critical applications. Realistically, new "features, enhancements, etc" are not part of a necessary update path for corporate employees.
My employees do not need the new version of "Bubble Blitz" because it has "Exciting new levels". Nor do they need the new Mail application. Or the new version of the calculator.
Or the new telemetry handler. What they need is the ability to come into work every weekday, perform routine maintenance on our infrastructure, and be able to open an IDE and a media player. You claim that it is impossible to predict user requirements over the next few months. What on earth do you suppose industry requirement analysis exists for, then? I most certainly can predict what my users will need over the next year, because I know what our company forecast is.
I can cost out what we will need to spend well in advance, and be safe in the knowledge that I will not need to borrow from other budgets to implement a quick fix for an application that has suddenly failed because Windows no longer uses a given API. Furthermore, re: your issues with Office, BSODs etc, this is evidently an issue with your deployment. Granted, we don't use McAfee spit here. Speaking of utilities, the last time I saw anyone use a calculator on a PC was before the birth of Windows 8.
Of course, I don't claim that it is no longer necessary - but is it really that difficult to wrap up the old Windows 7 calculator and deploy it in an image? Or any other application? You create an image once every few months, perhaps weeks at the most. Incidentally - LTSC is hardly "never updated". It gets security patches, and I'm surprised you don't know this.
I work in a school public charter school and we use Windows 10 LTSB the release on all of our laptops and desktops in our organization. We have about 75 employees who use a computer everyday, and about students middle-school who use laptops and desktops every day. We have around or so end devices running Microsoft Windows The games all have an educational aspect that we use here. All of the above run flawlessly on Windows 10 LTSB without any warnings, errors, or any other weird stuff like that.
We did that last year to run Microsoft's Minecraft Education edition, which is a Windows Store app only. The metro apps Windows Store apps bundled with the consumer versions of Windows 10 are not there. Instead you get the legacy versions, such as calc. The old Windows Photo Viewer is also still very much intact and alive - but you've got to add some settings to the registry to enable it.
That's what I did for our images here. Non-LTSB editions follow the new SaaS model where new features think, the next 'edition' of Windows are pushed out automatically on a 6-month basis, give or take.
If you're like me in my organization and you image your computers from a customized master image that you create and keep up-to-date then LTSB will probably make your life a lot easier than the other versions. The the first time I had a bunch of work orders in one week from people complaining about everything getting changed around suddenly when Windows 10 updated itself to the next "feature pack" I said, "Nope. You don't have to set any policies for any of the Windows Store apps and stuff like that So it makes it much simpler to manage and maintain for the long term.
Microsoft says LTSB is for specialized devices. Organizational computers that shouldn't change without direct modification of those systems by that organization's IT staff ARE specialized devices. I'm not dissing the regular Windows 10 versions - I personally think Microsoft really did a lot of things right with Windows 10 - both LTSB and the regular editions. My favorite part of Windows 10 is the very fact that Microsoft gave us the LTSB option for organizations that don't want major Windows 'edition' updates being deployed to production computers.
